La vida es mejor con vegetales, pero para poder llegar a decir eso, hay que aprender a quererlos y comerlos. Los vegetales siempre van bien en las comidas; aparte de todo lo que aportan nutricionalmente, mejoran sabores, texturas y aromas. En casa suelo tener siempre berenjenas y calabacín, dos vegetales que me encanta agregar a mis comidas. El tema está en que se puede caer en una rutina y al final terminar aburriéndose de comerlos. Por supuesto, y como me gusta hacer con todas mis recetas, preparé una versión donde agregué ají dulce en la salsa base y así darle un toque venezolano a un plato francés. En mis salsas de tomate no puede faltar el ají. Se pueden hacer diferentes variaciones agregando tan solo queso parmesano, y el resultado es totalmente diferente. Preparación || Preparation

- Se comienza por la salsa. Se cortan los vegetales para la salsa en cuadritos y se colocan en una sartén. Se saltean todos con aceite de oliva, sal y pimienta negra. Una vez estén bien cocidos, se procesan y se vuelve a colocar la mezcla en la sartén, agregando las hojas de laurel, el tomillo y se lleva a cocción por 2 minutos. Se apaga y se reserva. Si quieres sabores ahumados, puedes rostizar el pimentón y los ajos. > - Start with the sauce. Dice the vegetables for the sauce and place them in a frying pan. Sauté them all with olive oil, salt, and black pepper. Once they are well cooked, process them and return the mixture to the pan, adding the bay leaves and thyme, and cook for 2 minutes. En una cacerola para horno, se coloca la salsa en la base y se colocan las rodajas de vegetales, manteniendo el orden para que se vea muy colorido. > - Cut the vegetables for the ratatouille into slices, ensuring that they are all of similar thickness and size.
