What a load coconut tree; great job! I am enjoying that you post about your tropical fruits and hope you do not mind the long comments.
That coconut tree will not grow much. It is called a "Chinese coconut." The trees all stouter and the fruits do not turn yellow (they remain green). They are the sweetest tasting coconuts and are mostly used for water; the nuts do not carry much meat.
Also, yes, the time of harvest matters. During a full moon your coconuts may also get a sappier more bitter taste in the water. When you want to cut a bunch, I would first test with one coconut and if it's good, then the whole bunch it came from is ready.
These are my 4 Chinese coconut trees. The tallest is only about 8 feet tall, but was planted over 15 years ago. That's small compared to the "tank coconut" tree in the background which is younger 8 years and stands at over 14 feet tall.
