Undertale can be described as a little gem, that wants to be treated as something much more than just "a game" and it certainly deserves that.
In Undertale you take on the role of a child who finds his/her way into a strange, curious world. A world you can either decide to annihilate or salvage. A world inhibitated by countless of creatures that are for the most part simply refered to as "monsters". But can you really call a scared, hopeless being that simply wants to defend itself a "moster"? A creature that uses violance against you only because every second of its existence has been nothing but torment? That is for you, the player, to decide once you're faced with determinating their fate.
As stated above, Undertale wants to be something more than a game and it executes that will with great confidence. Because how many other titles have the balls to criticitize something as desired by gamers as freedom in games? Or maybe not necessarily freedom, but the way of thinking that the player may perform the most horrendous deeds just because the game gives him the option to do so.
It calls itself "The RPG game where you don't have to destroy anyone.", but it never enforces any moral decission onto you. It simply presents the background, the choice and sometimes slightly implies the consequences. Because they're always consequences.
UT is also heavily interesting from a gameplay point of view. The main battle mechanic, which is basically a simplified bullet hell, falls into the category of "easy to learn, hard to master" and it gives the player a great sense of accomplishment once a tough fight is completed. The difficulty nearly always seems to match both the type of enemy you're fighting and also the playable character's emotional state at the time being, which creates a feeling of well-balanced gameplay.
Of course, it is hard not to mention the absolutely amazing soundtrack in Undertale. I don't know what else could I say than that every single note matches the situation/scenery/encounter flawlessly. There's no way you could easily forget the music in this game.
Overall, I can with full confidence say that after 2 Pacifist runs, 1 mixed and 2 hard mode playthroughs, Undertale with all the memorable characters, encounters, themes and sceneries it presented to me is my favourite indie game and I couldn't recommend it highly enough.
