When you use the #hashtags in your post you want to tag the words that people might use to search for those images. If someone was to look for an image of a watch they would likely use the word "watch" not "photography", "photo" or "stockimages". If the search "photography" then they are more likely looking for images to do with taking photos, not any random photograph.
