and I don’t think I’ve even reached the highest paying one yet

I think this is why. We all thought we wanted to be the richest we can get, we thought that would be the end game.. but for some people once they reach that goal they have in mind, they realize that is not something they want. A high paying job also means high demand or high stress. Life is too short to live your life doing what you don't really enjoy. Time is really something you can't earn back, but money will always be there to earn.

Also don't get me wrong, there is nothing wrong with chasing a dream of being rich and if that's what you want you should go for it! And I agree with you, success is different for each person.

And I also hate the saying "quitters never win" haha
