Have I mentioned how much I love springtime?!?
My kids and I went foraging last week and came up with a large basket of miner’s lettuce (a small, early spring, wild leaf lettuce that is juicy and sweet). It has been a delightful addition to our diet and is wonderful mixed with the red leaf lettuce from the store.
And sometimes, you end up with little surprises, too!
It has been several months since writing a “homesteading” post, but a month or two ago I finished digging the carrots we let winter in the garden. That was an amazing experiment! Fresh carrots through the winter?! They lasted so much better in the ground than they do in the fridge. I am willing to “overwinter” more this next season (we have four rows planted).
Speaking of gardens, we got ours tilled up and planted this last week. Corn, potatoes, squash, eggplant, pumpkin, peppers, malaga spinach and chinese red noodle beans from
