In my experience, the rice in Peru and SA generally is too dry. I would much prefer our Asian sticky rice rather than this deadly dry one. haha. And it is too salty. it's even much saltier when you go up to Cusco or any place in higher altitude. As I was told, salty food is helpful for high altitude sickness. It makes sense.
Although Peruvian food wasn't my thing, Ceviche was good for me. ^^. Dont forget to try Inca Cola. I love it.
