Because that is all we can do. Information by its nature lets us know what we don't know as we attain it. So as we learn more things the amount that we know we don't know grows and grows while the amount we know seems to shrink.  Plus everything we know is based off of assumptions and conclusions based upon information we had previously gathered, so all of our information lies on a bedrock of the assumptions of an infant.
