I feel that you don't always have to feel bad for doing the things you like, you just have to enjoy what you are doing and not focus on finishing everything.
For example, I am building a collection of dragon ball figurines. It took me a while to start but I'm already on the fourth figurine (I just posted it). Time goes by very fast and before I know it I'm going to finish it and move on to another project once this one is finished.
I'm trying to enjoy the process instead of just rushing to finish, as that's what really fulfills us, the process. So I don't feel like you're a "bad Otaku". Just watch as many as you want, tell in your blog what each one leaves you with in chapters or just watch them and enjoy, because only this way you will do it with true passion. Don't worry about how many you are missing, just enjoy the process of watching them. That's what I can tell you hehehe
By the way, I want to start watching Dr. Stone too, I'm surprised I haven't seen it yet.
