Interestingly, there’s a staple dish in Okinawa, Japan called “Goya Champuru”. It’s basically a stir- fry of bitter melon with tofu, eggs and pork. Okinawan residents are said to have low rates of diabetes, cancer and and so on. Many centenarians are there. The first time I tasted it, I basically couldn’t eat it. Bitter! Lol! It’s an acquired taste eh. I don’t eat it often but now I love it. The bitterness adds a kick to other flavors. One just needs to know what to expect before eating it. Haha!! No bitter surprise. Haha.
