Happy new month to all the community of hive!

I am sure that for each and every one of you, November means something different. For me it is the month of the olives harvest and the production of our organic extra virgin olive oil!

Along with the biggest part of December, it is the most physically demanding month in my work at the farm and the most important one. It is the time to harvest the fruits of a whole year's work and it has to be done correctly.
Olive oil is one of the strongest medicines that nature has to offer but in order to take the most of its benefits you have to treat the olives delicately and with the proper respect.

Stacking them for days into huge gunnysacks, or using high temperatures during the extraction, is not the way to obtain a high quality result. Each step from the tree to the bottle is very important and leaves its mark to the taste and the properties of the olive oil.

I wish I had more time to document properly the procedure but it is really hard to be the farmer and the photographer at the same time, especially when there is is a ton of work to be done!

I do have though, a couple of short clips and two more pics taken on my mobile phone just to give you a hint of the farms vibe :)
