One sumptuous platter of tasty nutritious meal. I just love mashed potatoes and soft & tender,, perfectly cooked chicken. Generally, I pour beetroot puree on the cooked rice and relish the whole dish with it, garnished with some chopped/grated carrots, cilantro and scallions.
