Courgettes are used as a vegetable but botanically classed as a fruit. They are a nutritious and versatile food and part of the squash family.

We like to lightly fry courgette with olive oil and garlic, add them to Italian dishes, spiralize raw courgette into salads, or scoop out the middle and stuff them with vegetables, rice and cheese and bake them.

Courgettes are rich in vitamins A, B, C and K, manganese, potassium, magnesium, copper and phosphorus. They also contain iron, zinc and calcium. The fruit and particularly the skin is rich in antioxidants.

Courgettes are reputed to aid digestion, reduce blood sugar levels, improve heart health and strengthen vision.

Did you know that the courgette flower is eaten as a delicacy both raw or fried and used as to garnish dishes?
