The only middle is the imitation of "good" bread, which is basically cheap bread with a pretty exterior.

The breads you've made looks really good! The pictures reminded me of my travels across Europe. Such good bakeries out there!

If you are passionate about this then you should keep going. Don't let some setbacks hold you back. :)
