This is my response to hiveghana prompt which talks about intercontinental dishes and African dishes.
The term "intercontinental food" describes dishes that incorporate ingredients, preparation methods, and flavors from other continents.
It is a blending of several cooking methods, integrating ingredients from other parts of the world like the Americas, Europe, Asia, etc while African food refers to the traditional dishes that are unique to the various parts of Africa.
Secondly, The main difference between intercontinental food and African food is the ingredients used, The ingredients used in intercontinental food compared to African food are one of the main differences. The ingredients used in preparing intercontinental dishes include ingredients from other part of the world which produces a special blending of flavors and textures. But the major ingredients used in African food, are native compared to intercontinental food and it comprises a variety of African-native fruits, grains, meats, and spices, giving the food distinctive tastes and flavors.
The cooking techniques used in preparing intercontinental food are different from African food, African food is prepared differently from food from other parts of the world while Intercontinental food often involves complex and complicated cooking methods from various parts of the world. For instance Chinese food includes stir-frying and steaming, while French food may employ techniques like simmering but African food is frequently distinguished by straightforward cooking techniques that highlight the natural flavors of the products. This can involve baking, stewing, boiling, and grilling.

When it comes to the diversity of dishes, Intercontinental food gives a wide variety of alternatives and this is so unique for example dishes can vary from Tacos to curries to sushi and pasta. But in African dishes we are bonded with our local dishes like the couscous dishes and tagines of North African food, the jollof rice and fufu of West African food, and the injera and pilau of East African food.
I prefer African dishes to intercontinental dishes because
African food is distinct from intercontinental food in terms of ingredients, cooking methods, cultural significance, and also variety. African food highlights the distinctive flavors, ingredients, and cooking methods of the numerous regions within Africa.
