I think it might be even simpler than that. There's a faint ghost of an image coming through the signal with some carts, so my guess is that I've got too much interference in the mess of wired behind everything. I just haven't really sat down with it yet to troubleshoot what's going on. The fact that I can't find a service manual online bums me out.
