This documentary is definitely one to watch! I do agree with you. I watched this one last year sometimes when it had its run on Comedy Channel (yes, they also do no comedy) or some other TV station. I never realised David Foster was behind all these famous songs and artists. I know David Foster from his piano album David Foster and The Symphony Sessions. Though these albums carry some tracks I know from various movies, I never realised he was the creator of all this himself. I suppose, as you, am not too much into pop music and never took the time to research this guy. Must say, both albums I purchased back in the 80s when they got published. Back then, listened to them quite a lot being still in my transition from listening to more pop-ish like music towards all sorts of other, music genres not being pop at all.
Anyways, regardless of liking pop or not, this documentary is almost a must to watch when one likes music. This guy is sooo passionated. Its simply great to see how his drive and his feel for what the mass likes to hear, results in sooo many hits!
