That looks tasty LOL :D
For years I have been totally avoiding eggs, and even back when I ate meat I didn't really enjoy them very much (the slimy texture and where they come from is a bit gross). But actually in the past few months my wife and I found a source of free range farm eggs (from truly happy organic birds), and have been adding them to meals for the nutrition. She is pregnant, and requires a lot of iron, which is hard to get from vegan sources. Plant iron is good but animal iron is easier to absorb. Ethically I have some trouble with it, because I know that in some cases even happy backyard/farm chickens result in some harm being done. Because when eggs hatch for new hens, half are male, and usually more of them are destroyed right away. Nobody needs a lot of roosters! So... I believe this is a temporary thing while she is pregnant and while we are cut off healthcare because we are not vaccinated. Eggs can be pretty bad (factory farmed eggs where the birds are tortured and live totally unnatural lives), or totally ethical (if the birds are healthy, happy, and natural, and males are not killed right after hatching).
Anyway, eggs are a lot better than dairy, so if it came down to a choice between dairy and eggs I would always pick eggs.
Also, there are GREAT dairy alternatives now. But still not a lot of great vegan egg replacements (in my opinion). If you like coconut, it makes really amazing icecream.
