Depends. IX is probably the easiest to get into, VIII is overall the simplest I think, but V is probably the funnest, of course you basically need a guide just to know what monsters are even recruit able, and recruitment rates require a fair bit of grinding to get the party you even want. If you don't mind that aspect, V is the best.

XI, the newest one, is also a pretty solid game. So one of those four.
