Today is Thanksgiving and my family and I have a lot to be thankful for this year. It has been a rough past year, but things are starting to look a lot better for us.
I have been preparing the turkey for the past few days and I can't wait for it to be finished and eat it. I stopped buying whole turkeys a few years ago and have moved to this massive turkey breasts that one of the local butcher shops sells. They didn't have the same turkey breasts that they normally do, and this one required the turkey to be soaked in a brine solution to help infuse some flavors and make it super moist.
So yesterday I started the brine and then took it out after about 8 hours. Now I am coating the turkey with these two different rubs. I have found that this combination is pretty amazing.
Man, I can't wait to eat this. It is going to be amazing. It is about 9 pounds of nothing but the delicious white breast meat of the turkey. I bet this turkey was massive to have so much breast meat.
So now it goes on the smoker until it is at about 165 degrees. I had it one high smoke for about an hour to really infuse the meat with a nice smokey flavor. Then I wrap it in foil and cook it low and slow at 200 degrees for the remainder of the time.
So while we wait for this to finish, we have a lot of work to do getting the house ready for family to show up. We haven't seen our families very much over the past year, so it will be good to have everyone together again.
Speaking of Thanksgiving, this is a perfect day for Hive to be seeing some all time highs. $2+ Hive is amazing. These new highs are going to allow me to purchase a new iMac. I have been missing my old MacBook Pro and have been getting so sick of trying to edit photo and video using Windows. Nothing beats Apple's software.
