I was a restaurateur for 12 years and guests loved it when we did fusion. Asian style food mixed with herbs from the Caribbean cuisine sounds like an explosion of flavours. Combined with fresh ingredients and a probably Zen atmosphere is probably the reason this business is open for so long! Those figures you give, I dunno if they are for all startups, but restaurants tend to go out of business a hell of a lot quicker then other industries. People assume when they got a compliment from grandma that the soup was good, they can now open a michelin star restaurant. It is one of the hardest industries I know. Kuddos to them, they found their USP and exploited it.
