The ability to freeze value is very necessary in order to take things to the next level. If I sell you my car in Bitcoin, then I want to know when I go to turn it into fiat, or even just spend it on another purchase, that it is worth the same as when you gave it to me.
This is the main thing stopping mass adoption, if you are a major retailer like Sony or Nike, a fluctuation of just 0.1% could cost you tens of millions.
