I just love carrot cake, its my favourite and I add lots of other ingredients such as nuts and raisins, and sometimes even I add rolled oats, pistachios, cashews or even toasted coarsely grind peanuts too ! Sometimes add Tutti Frutti also, all these various ingredients when added to the cake batter make it more rich and delicious.
