Yeah so true. It's happening but very slowly and really only in progressive cities like Melbs and Sydney, though Brisvegas would probably have a few. The difference between them and Aulac though, is that they cook food without animals, whereas Aulac has "soy" products to mimic animals.
I asked the chefs back then how they made the "meat" texture and taste and tear and they said that they didn't know, because it all came from Vietnam- which is a bit concerning too I think...lol..
