Yeah this would work well with just chicken curry. Here in Scotland the chicken curry pies that are sold in bakery's don't have veggies just curried chicken meat.

I might try some new ides using just chicken curry soon , yesterday I learned about a type of fried Italian street food called "Panzerotti Fritti" I might try to make a chicken curry version of it soon :)
