The avocado cheese replacement is a great idea. I have never made a Caprese but they always look inviting. Yours is much more inviting. I love all the fresh herbs and the seeds are a nice addition. Yum.

The chickpea salad looks tasty too. I get excited when I see a lime being squeezed on something.
