I was saying this way back in the days of the lockdowns.

Now, i know of several food trucks that are "permanently" parked at certain spots. Even have ratings on Bing.

It is soooo much cheaper to start a restaurant in a truck.
Just the fees for opening a brick and mortar restaurant are daunting.
Let alone the insurance, lease, utilities...

One idea i have had is bringing a restaurant to a group.
Basically a catered dinner on some cul-de-sac.

The only restaurants that i saw stay in business were from take-a-way and drive through.
Why pay for delivery when the entire restaurant can come to you?
