I think a cow or two would be a great addition to your farm. Dexter are great. If you are looking for a milk cow though a Jersey is hard to beat. They should be quite a bit cheaper than a dexter and give better milk in my experience. If it is beef u are after easiest and cheapest route is the ask farmers around to sell you an orphan calf. You will have to bottle feed it but I have gotten them fro free or $100 bucks.
