Unfortunately for my wife however - I can't make everything 10% larger.
Sure you can - Just ask the guy from Super Size Me and you can do it in a month!
Jokes aside and maybe it's an age thing, I have also been contemplating way too much about the future and how to make sure my family is secure should anything happen to either my wife or myself. I know you are aren't the biggest fan of putting money in banks, but we have started putting monthly amounts into an account for my daughter, so hopefully in 10 years time when she goes to University, she will have enough to cover her fees, not HECS for her please. Not totally sure if it will fully cover all her fees, but I definitely do not want her starting her working life with debt hanging over her shoulders.
We are also actively split our savings into different accounts and taking the approach of "out of sight, out of mind". The less we think we can spend, the less we do spend. Might also look at tweaking our life insurance as well.....but that's for another day.
You mentioned that your life insurance won't cover your mortgage. Is that due to your stroke and that the insurance providers aren't willing to increase your coverage?
