Dinner tonight: Steak Tips, Egg Noodles, and a Strawberry Avocado Salad.
Sirloin Tips, sliced into serving pieces, seasoned with Oregano, fresh cracked black pepper, ground sea salt.
Chicken tenderloins, marinated in Zesty Italian Dressing, some lemon juice, and some Balsamic Vinegar.
Egg Noodles with some butter (I use Earth Balance, the non dairy option is a bit easier on my digestion.)
In a large bowl, I made a rough chop of some baby spinach leaves, some sliced strawberries, fresh ground pepper, sea salt, and some avocado, cubed. I will spritz a little lemon juice for brightness and serve with a balsamic oil and vinegar dressing.
Family is ALWAYS important to me.
It's towards the end of summer. Both daughters head back for their last year of college, this coming weekend. But, last gasps of summer, they are here, on Cape Cod. So, with all of the kids arriving today, I pulled together a meal for all and we're laughing and chatting tonight. Well, at least until they all head into town for a drag show!
Family and love is important and to me, nothing says love more than a big meal around the table. Laughing, telling stories, a cocktail, and some giggling. It's nice to have my daughter's girlfriend comfortable around us, and joining me in meal prep. She cut up the strawberries, and the avocado, for my salad. I handled the rest, while my oldest mixed drinks, and my youngest made us laugh.
Always, I strive to give back To the animals and birds around me to put more plants in than I take out And be a good steward for the world around me!
