I read the headline and looked at the photo and thought "That's chili rojo not chili verde." Then I got into the article far enough to realize it's the name of the restaurant. :)
There really isn't a Mexican Cuisine so far as I know. There are at least 4 regional varieties. I live square in Sonora where the traditional food is very mild to bland. All the hot stuff is on the side and it ranges from spicy to "Mother of God! Give me water." Baja is also Sonoran but incorporates a lot of fish.
North Central Mexico (the other region I'm at all familiar with) tends to be cooked in more spices and doesn't rely so heavily on the sauces.
That said, I've found a lot of Gringo Mexican restaurants that I like a lot. But I'm always aware that they aren't particularly authentic or maybe that they are a mix of the regions. Sorta like Americanized Chinese. One of my favorite 'nortre' restaurants is in Spokane, Wa. It's a mix tape of various Mexican styles.
Amazingly to me, Taco Bell and Del Taco both thrive here. It's a sort of standardized 'change of pace', I guess.
