I recommend to focus on how to adapt agricultural techniques to climate stress and all those coming challenges for agriculture... I did some courses in Organic Agriculture, Soil Preservation and related things. Even a course on watering techniques when I was on exchange here in Ecuador. That was very interesting, the Israelis really have shit figured out on how to use water efficiently. And the Ecuadorians use the "oldy but goldy" - dirt channels within the field that the water is channeled into. Looks easy, but is very hard.

Parts of my family has farms, it's a very interesting area, and I always liked it. Except for collecting stones in autumn at 6am, that was way too cold and wet and no matter how many socks you put on, your feet would freeze. But I hope you enjoy the studies!
