Yeah it wouldn't be possible to do it this way in Germany. I probably wouldn't even be a baker there, as I never did the formation for that.
Here, everyone sells on the street. Everything. You see pigs hanging on shack beams on the sidewalk, being carved up for those who'd like a piece. In comparison to that, my bread in a basket is rather easy going 😅
We usually sell on markers, it's just Tuesday that is a street sale day. When I started, it was less Walking around and more selling out of a showcase we have at my former restaurant. But the other salesmen got people used to getting bread wherever, so I stick with their technique now. Would be too much of an effort to change it again.
