I've been a fan since the original on the PS1, and each of them are great in their own way! The remakes are probably the best way to go though if you're relatively new to the series. Fighting those ancient tank controls can be frustrating haha

Also, RE 8 continues with the first-person perspective and follows Ethan Winters again, so if you end up liking 7 then I'd highly recommend checking it out!
