For today, my creative-sunday meal is a very special one. I want us to talk about what the Igbos call UKWA. This is known as breadfruit in English language. UKWA is a eatable fruit that has so many nutritional values. It is mostly eating by the Igbos in Nigeria, I don't know about other parts of the country or even beyond. But one thing I know for sure is that the Igbos see it as one of the best delicious meal that is sometimes expensive to purchase. It can't be compared to rice, beans of any other meals we do prepare because it is the only meal that can be prepared without the addition of anything like: oil, maggi, onion, meat, crayfish, and other condiments or additives that we are used to. You can prepare it and eat it without adding any of these earlier mentioned.
Let's go down to business. UKWA or breadfruit takes a longer time to prepare compared to other food we know how to prepare.
We are going to be starting from the point of separating the seed from the chaff.
We just need two things for this meal when it comes to ingredients needed for it:
One- UKWA seed
Two - potash ( this is locally made potash)
PREPARATION PROCESS
one- soak the the UKWA for three days in water.
Two- boil it for thirty minutes and bring down.
Three - use either hand machine or any means you prefer to separate the seed from the chaff
Four - spray it in the sun for about four to five hours.
Five- gradually remove all the chaffs and throw away.
Six- get a neat pot and start the cooking process already
Seven - cook until is very soft with the help of potash. That means you will add your potash while cooking it. What I use here is locally made potash from Palm front chaffs.
Eight - bring it down. If you like you can separate the water from the seed, but I prefer taking them together.
Note- some prefer to make it like portage, thereby removing the water after cooking it and adding maybe onions, maggi and few other things to suit their taste. But I eat it without the addition of anything because I know that it has everything in it.
