Two that jump to mind straight away are these. To be honest, I rarely like covers especially byt established artists who should be writing and performing their own songs. It is similar with Movies that are remakes or that are basically copying an idea from another movie, I want something original and ground breaking.

Why the two songs I picked? The emotion that both are delivered with is pure, beautiful and poignant.
