This looks like a beautiful place to finally get to work with your project! Good luck and success!
Furthermore I'd like to share with you a concept for gardening invented in Bavaria, Germany. It's called the "3 zones garden" and is trying to take the principles of permaculture to the next level by putting it into an enclosed, circular, environment. They usually call their gardens "Hortus". I don't know if it's of any use for you, but here a link to the principles (unfortunately in German): https://hortus-netzwerk.de/der-drei-zonen-garten/
I'm pretty sure there is information available in English and maybe french too... but I don't have them available to share.
Happy growing!
