In my childhood memories there is a lady who used to pass in front of my house with a large tray on her head full of the most exquisite coconut preserves. The container of the heavenly delicacies seemed to be attached to her head by some kind of magic because the lady could go up and down the street without dropping it and in passing she would turn her head with a certain grace in attention to those who called her to buy one of those little pieces of heaven. She had coconut preserves of all colors, also those made with sugar cane panela, but there was one with which I had a special connection, they were the ones made with coconut and pineapple. They were not totally dry like the others, this one retained a little moisture and had that combination of colors, flavors and texture that made it irresistible to me. Thinking back I set out to make this preserve and to do so I used:

En mis recuerdos de la infancia se dibuja una señora que pasaba frente a mi casa con una gran bandeja en la cabeza llena de las más exquisitas conservas de coco. El contenedor de los celestiales manjares parecía estar pegado a su cabeza por alguna clase de magia porque la señora podía ir calle arriba y calle abajo sin que se le cayera y de paso giraba su cabeza con cierta gracia en atención a los que la llamaban para comprar un de esos trocitos de cielo. Tenía conservas de coco de todos los colores, también las hechas con panela de caña de azúcar, pero había uno con el que yo tenía una conexión especial, eran los de coco con piña. No eran totalmente secos como los demás, este conservaba un poco de humedad y tenía esa combinación de colores, sabores y textura que lo hacían irresistibles para mí. Haciendo memoria me propuse hacer esta conserva y para ello utilicé:

With only these ingredients we will make a delicacy for the gods. The first thing I did was to make a small hole in the tender part of the coconut and drain all the water that by the way was very tasty, actually I had only one sip because I made my children try it and they did not leave for anyone, it was nice to see them taste coconut water for the first time. Then I opened it by tapping it gently but firmly on a sturdy surface. With a thin knife I separated the pulp from the shell.

Con solo estos ingredientes haremos manjar para los dioses. Lo primero que hice fue hacer un pequeño agujero en la parte tierna del coco y drenar todo el agua que por cierto estaba muy rica, en realidad tuve solo un sorbo porque les hice probar a mis niños y no dejaron para nadie, daba gusto verlos probar agua de coco por primera vez. Luego lo abrí golpeando suavemente pero con firmeza sobre una superficie resistente. Con un cuchillo delgado separé la pulpa de la cáscara.

The second step was to remove all the brown crust that covers the pulp and after washing it I finely shredded it. I took the pineapple and cut it into slices to remove the peel more easily and cut it into very small squares.

El segundo paso fue retirar toda la costra marrón que recubre la pulpa y luego de lavarlo lo ralle finamente. Tomé la piña y la corte en rodajas para retirar con mayor facilidad la cáscara y la corte en cuadros muy pequeños.

In a not very big pot place the panela with 1/3 cup of water over low heat to dissolve it, then add the sugar and with a wooden spoon preferably stir to make a thick syrup. Pour the coconut and pineapple into the syrup and continue stirring. At this point both fruits will start to release juices and we will be calm because it is normal. Stir eventually and without realizing it all the liquids evaporate and a much more mirror-like syrup with a very special flavor is formed. We continue to cook it now stirring constantly until it forms a not very dry ball. We turn it off and transfer it to a greased mold, mark the portions while still hot and let it cool before separating the portions. We do this while it is still hot because when it cools it will harden a little and it will be difficult to cut.

En una olla no muy grande coloque la panela con 1/3 de taza de agua a fuego bajo para disolverla, luego agregué el azúcar y con una cuchara de madera preferiblemente removemos para hacer un almíbar espeso. Vertemos en el almíbar el coco y la piña y seguimos removiendo. En este punto ambas frutas empezarán a soltar jugos y estaremos tranquilos porque es normal. Removemos eventualmente y sin darnos cuenta todos los líquidos se evaporan y se forma un almíbar mucho más espejo y con un sabor muy especial. Lo seguimos cocinando ahora removiendo constantemente hasta que se forme una bola no muy seca. Apagamos y pasamos a un molde engrasado marcamos las porciones aún caliente y lo dejamos enfriar antes de separar las porciones. Lo hacemos cuando aún está caliente porque al enfriarse se endurecerá un poco y será difícil cortar.

These preserves can be stored in an airtight container because as the name suggests it is a way to preserve the coconut and pineapple although honestly this is irresistible and there is hardly anything left to keep. My kids called this dessert coconut candy and they were fascinated and I was not even talking about it, I felt like a kid again. I hope you like it. Bye Bye.

Estas conservas las podemos almacenar en un envase hermético porque como su nombre lo indica es una forma de conservar en este caso el coco y la piña aunque honestamente esto es irresistible y difícilmente quede algo para guardar. Mis niños llamaron a este postre caramelo de coco y estaban fascinados y yo ni hablar, me sentí niña otra vez. Espero les guste. Chao Chao.
