Peanut Butter Banana Chocolate Chip Muffins (Vegan!)

Happy (almost) Valentine’s Day!

These mouthwatering sweets are the perfect baked gift for your own sweetheart this year. You can make them into pop um’ sized mini muffins like I did, or the standard muffin/cupcake size. I’ve made them both ways in the past and they’re great either way.

Ingredients:

  • 2 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tbsp baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 bananas
  • 1/4 cup unsweetened applesauce
  • 1 cup vanilla soy milk
  • 3 tbsp canola oil
  • 1 teaspoon vanilla
  • 3/4 cup creamy peanut butter
  • 1 cup vegan-friendly chocolate chips

Directions:

Preheat the oven to 350 degrees.

In a medium bowl mix together the dry ingredients (flour, sugar, brown sugar, baking powder, salt, and cinnamon).

Then in a large bowl mix mush the 2 bananas and add the remaining ingredients on the list (except the chocolate chips!) on top. Mix well then slowly add the dry ingredient concoction to the wet mixture and mix even more until all of the dry ingredients are now in the large bowl.

Now add in the chocolate chips.

Lastly put the batter into baking cups and place in the oven.

Cook mini muffins for approximately 15-19 minutes. Cook standard size muffins for approximately 22-27 minutes.
