My late Easter Post - vegan rockyroad egg

Easter this year was kinda hectic hoards of holiday ppl turned up in the building where I live, here in Spain the Easter holidays are quite short, children only have a few days of school, since they have such a long summer holidays, so ppl were turning up for a quick break just for the weekend.

So the usually quiet old 60s building a live in turned into a kind of buttons holiday camp vibe, music, fiestas, and lots of commotion.

I'm not a big holidays person, I work from home and I don't see the holidays as anything special, just commercialism, to buy presents, eggs, holidays whatever.

However I do love chocolate and since there aren't really vegan Easter eggs in any local shops in my area and I since I had alot of left over ingredients in my pantry I needed to use I decided this rocky road would be perfect.

I had rice puff and corn flakes brought from the health food shop so they were whole grain with no nasty extra additives. I made a paste with dates, hazelnut butter, carob syrub and a little juiced orange all blended together. This paste formed a sticky texture that I mixed in with the rice and corn puffs to make the base.

I then went on the make my own chocolate since I has alot of cacao butter lying around, after melting on a ban Marie I added the cacao powder and banana sugar.

This delicious mixture got poured over the base and then the final touches were chopped spanish almonds, delicious raisins id saved from my trip to Turkey and some dried cherries from my trip to Portugal last year. The final result was scrumptious!
