Introduction:
Maize (Zea Mays, referred to as corn in North America) originated in central Mexico in around 5,000 BC. The crop was introduced to Europe in the sixteenth century, from where it spread to Africa and Asia. It is now one of the most widely-grown crops around the world in both temperate and tropical regions.
Maize also known as corn, is a cereal grain first domesticated by indigenous peoples in southern Mexico about 10,000 years ago. The leafy stalk of the plant produces separate pollen and ovuliferous inflorescences or ears, which are fruits, yielding kernels or seeds.
Maize has become a staple food in many parts of the world, with total production surpassing that of wheat or rice. However, not all of this maize is consumed directly by humans. Some of the maize production is used for corn ethanol, animal feed and other maize products, such as corn starch and corn syrup.
The six major types of corn are
dent corn, flint corn, pod corn, popcorn, flour corn, and sweet corn.

PROPERTIES:
Corn starch is a common food ingredients used as thickening agent in sauces , soups , and in making corn syrups and other sugars .
Corn syrup is a food syrup which is made from the starch of corn.
Endosperm of corn contain a protein “ZEIN” .
Endosperm contain starch protein and fiber .
The germ portion contain oil and activated enzymes .
Bran contain fiber and vitamins .
Health benefits:
Good for Digestion. Corn is high in dietary fiber which comprises of both soluble and insoluble fiber.
