Cortamos en trozos pequeños los vegetales y la mortadela, colocamos un sartén a fuego medio, añadimos un pequeño chorro de aceite, esperamos unos minutos a que caliente y freímos el huevo, luego lo retiramos del sartén, añadimos el ajo y dejamos sofreír hasta que dore, luego agregamos el resto de los vegetales, debemos ir mezclando constantemente mientras los mismos se sofríen y sueltan sus jugos, en este punto podemos añadir un poco de sal para ayudar a la deshidratación de los vegetales. >Cut the vegetables and mortadella into small pieces, place a frying pan over medium heat, add a small jet of oil, wait a few minutes for it to heat up and fry the egg, then remove it from the pan, add the garlic and let it fry until golden brown.
