Scottish Shortbread

IMG_0106.JPG Scottish Shortbread is very easy to make. It's very rich and you may once you try this recipe you may never want to buy it off the shelf again! Here's the recipe: Classic Shortbread Recipe with only 4 ingredients:
Recipe:
3 cups cake flour
3/4 cup powdered sugar
1/4 teaspoon salt
1 and 1/2 cups butter (or 3 sticks 4oz each)

Preparation: 1. combine the cake flour, powdered sugar and salt in a mixing bowl. mix on low speed just until blended.

  1. Add in your 1 and 1/2 cups of softened butter (three 4oz sticks cut into small pieces.)
  2. Mix in starting on low speed and mix just until it becomes a nice pliable dough.
    4.Divide dough evenly between two 8" pans. Press dough evenly throughout the pans making sure it goes all the way to the edges and is even on top.
  3. Take a fork and poke holes throughout the shortbread to make a nice pattern that will be seen after baking.
  4. Bake for 35-40 minutes in an oven that has been preheated to 325 degrees Fahrenheit, or until golden color on top.
  5. Remove from oven and immediately cut each pan into 16 pieces or however many you prefer. Allow to cool in pans while they sit on a wire rack. Serve when completely cool.
