材料A:
½烧鸭,去骨,剁碎
1粒蛋
½大匙蚝油
1大匙粟粉
少许麻油和胡椒粉
材料 B:
500g芋头,去皮,切块
100g澄面粉加入100ml滚水烫熟搅匀
2大匙粟粉
¼小匙五香粉
½小匙胡椒粉
1大匙蚝油
5大匙白油
1大匙糖
1小匙盐
做法:
1,材料A用大碗盛起拌勻,分成两份备用。
2,芋头放进蒸笼里,蒸熟,压烂成泥。
3,其余的材料B全部加入芋泥拌匀成团,分成两份。
4,将1份芋泥混合料成7X10“的厚片,铺上1份烧鸭然后对折封口,洒上干粟粉。剩余的1份也以同样的方法完成。
5,准备一个金钱眼放上芋蓉鸭,然后放进热中炸至黄色,捞起沥干分,切块享用(可做成2份芋蓉香酥鸭)

INGREDIENTS A:
1/2 roasted duck, debone and minced
1 egg
1/2 tbsp oyster sauce
1 tbsp corn flour
dash of sesame oil and pepper
INGREDIENTS B:
500g yam, peeled and cut into chunks
100g tang ming flour, mixed with 100ml boiling water, stirred until cooked
2 tbsp corn flour
1/4 tsp pepper
1 tbsp oyster sauce
1/2 tsp five spice powder
5 tbsp shortening
1 tbsp sugar tsp salt
METHOD:
Combine all ingredients A in a mixing bowl, Divide into 2 portions and set aside.
Steam yam until soft and cooked. Mash into paste.
Add in the remaining ingredients Band mix into a dough. Divide into 2 portions.
Roll yam dough into a rectangular shape (7"x10"), spread with 1 portion of minced roasted duck and fold up neatly. Dust with a little corn flour. se the same method to complete the remaining portion.
Place yam and roasted duck parce onto a flat bamboo strainer, immerse into hot oil and deep- until golden brown, Dish and drain. Cut into pieces and serve hot. (Make 2 Yam and Roasted Duck parcels)
