Moong daal kachori recipe || good food good mood # 36

Welcome to my blog again. I'm glad that you are here. Today i would like to share the recipe of kachori.

Kachori is a most famous Indian snack which is so tasty and like by all Indians. Kachoris are deep fried bread with the filling of lentil & spices and covered with maida/ purpose flour. This recipe took time and tricks to made but once we enjoyed the kachori our all efforts seems worth.

Some days ago i tried it first time. I always saw my mom making kachori on special occasion, so i want to give it a try. I was a little afraid that i didn't know how it would turn out. And i got good and yummy results šŸ˜„. I tried my mom recipe which i want to share with you all for hive top chef compitition.

Ingredients āœ…

For filling :

urad dal ( black lentils) 1/2 cup
Oil - 2 tbsp
Cumin seeds 1 tbsp
Salt to taste
Heeng 1/2 tsp
Red chilli powder 1 tbsp
Garam masala 1 tsp
Fennel seeds 1 tsp
Turmeric powder 1/2 tsp
Gram flour 2 tbsp
Dry mango powder 1/2 tsp
Dry Fenugreek leaves

For outer covering:

Purpose flour / maida 1cup
Oil 3 tbsp
Salt 1/4 tsp
Baking powder 1/4 tsp
Carom seeds 1/2 tsp

For deep fry

Method āœ…

Making filling/ stuffing:

Step 1 :

First wash the lentil and soak it for 3-4 hours. Than rinse the water properly.

Than grind the lentil .

Remember grind it without water and grind coarsely like above picture.

Step 2:

Now take a deep pan, add oil in it, when oil get hot add cumin seeds, fennel seeds and hing in it.

Than add gram flour and roast it for 2 minutes untill color has changed and you get nice aroma. Than add grounded lentil and add all spices one by one and cook for 5-7 minutes on the low to medium flame. Your stuffing is ready now put it aside.

After that make the small balls like this :

For outer layer :

Step 3 :

Now take the refined flour or purpose flour and add salt , carom seeds and oil in it. Mix well and knead a dough with the warm water.

Knead a soft dough adding bit by bit water . Don't knead it too soft.

Now cover it with kitchen towel and rest for 30 minutes.

Now all preparation are done for the kachori.

Deep fry the kachori/ making the kachori:

Step 4 :

After 30 minutes knead a dough once and cut the dough in the small equal portions.

Now flatten it with your finger like this and put one stuffing ball in it.

Cover it with carefully. This is the main step. Bring the dough edge together and join them at the center. Pinch the excess dough.

One by one keep ready all the kachori.

Step 5 :

Heat oil in a kadai or pan. When the oil is medium hot put 3-4 kachori in it for deep fry.

Make sure the oil is not too hot, when kachori become light golden gently turn them.

Fry till they become golden. It take mostly 5-7 minutes or depending the size, number and the flame.

Keep ready all kachori like this.

Put them on the paper towel. You see kachori become crisp from the outside.

Enjoy it with chutney, sause or tea.

You can keep this kachori for 2 days.
