I Can't Believe We're Talking about Chit
YEPPER DO, We're talking about it.

Chitting! potato is a perfectly normal thing, despite what it sounds like. All potatoes can become seed potato, if they have an eye. And so far, I haven't seen a single potato that doesn't have an eye.

In the photo above, you can see some sort of growth coming from each of the red potato. That's coming out of the potato eyes, and it is the part where new potato will grow from the old. Under the ground, these eyes will sprout these growths. Eventually, they break the surface with greens.

Once I see the green growth, I actually add much more soil (a version of hilling that is used in containers) to give plenty of space for the new potato to grow.

The growth becomes the green stalks, that grow tall, and absorb sunlight, helping to pull energy down to the seed potato, and the stalks under the soil. Off of each growth, more potato will come.

Once the greenery turns yellow and dies off, it is time to pick potato. When we flip over the soil and dig thru, we will find each stalk producing a half dozen to 10 potato each, on average. MORE if it is a good year.

Above: All of these potato are currently on my grow lights rack, in cool areas, with light for 16 to 18 hours daily. This gives them a chance to develop the growth from the eyes, giving them a head start for planting in mid March.
