Meatloaf Again?

Often, I talk about the fresh food from my garden, and today, while it doesn't exactly ALL come from the garden, a good portion does

On the Menu, tonight:
Meatloaf, Garlic Smashed Potato, Biscuits, Garden Salad.

Onions!

For the Meatloaf, and for the salad, I grabbed some fresh onion (two kinds!) from the garden: Bunching Onion, and Red Onion. The larger Red Onions are golf ball sized, and the bunching onion worked out perfectly.

2 Pounds (about a Kilo) Ground Meat. I use a combo of Ground turkey, ground pork and ground beef
2 small eggs
large handful of bread crumbs
Worcestershire Sauce
Tomato Paste
Chopped Onion
Greek Oregano (from my garden!)
Parsley (you guessed it: ALSO from my garden!)

Chopped them all and into a bowl.

COMBINE all (leave a small amount of tomato paste for garnish) into large mixing bowl, and hand mix thoroughly. When it is all completely mixed, pour out into 9x12 baking dish, and form a loaf. I like to make a finger indentation along the top, and run a stripe of tomato paste, in the channel, to give it some colour on top. I also sprinkle some grated Parmesan, or Pecorino Romano Cheese on top.

Bake in the oven, about 375º F (190ºC) about 45 minutes to an hour. At about 45 minutes, take a sharp knife and peak into the loaf, to see done-ness. I prefer more pink, but not everyone does. Some people are wrong and like to overcook it.

Garlic Smashed Potato

Below the Blue Potato, and the Red Bliss Potato both came from Harvest One, Second Container. Only a half dozen or so of the Red BLiss left, and that will take us, to almost when we harvest the first container, second planting!

I quartered all the potato, and into a pot of cold water. Boil them, until soft fork test.
Drain the water, add in Sour Cream, Butter, and Sea Salt. I used some minced garlic, too. Mash all together, skins ON the potato. The skin contains a LOT of the good nutrition, and it helps to make the smashed potato taste even better.

Garden Fresh Salad!

We're not going to get too many more harvests from the Arugula, this year. For some reason, it's just not doing well. That happens, sometimes. One year a great harvest of something, the next, not so much! Arugula, Butter Crisp Lettuce, Romaine Leaf Lettuce, Tomato, Carrot, and Onion from the garden. Feta, and dressing, no!

I recognize, not all of you are meat eaters... that's OK, to each, their own. The good news is, if you come to my table, and you are a vegetarian, I can feed you, too!
