Oatmeal Chocolate Chip Cookies - Lori's Cookbook

Definitely not paleo or keto, but sometimes, you just want some comfort food and homemade is definitely better for you than something store-bought - not to mention the fact it's cheaper and tastes better!

This is my entry for this week's @foodfightfriday challenge.

Oatmeal Chocolate Chip Cookies

Cream together:

  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • 1/4 c white sugar
    Note: for almost any baking recipe, you want to start with creaming together the butter and sugar.

Mix in:

  • 2 eggs
  • 2 teaspoons vanilla

Stir in:

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch, optional (it makes them softer, I seem to remember reading.)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Here is what the dough should look like now.

Stir in:

  • 3 cups rolled oats
  • 2 cups chocolate chips

The original recipe says to chill the dough an hour, but it would never make it to the oven in my house... so...

Drop by rounded teaspoon onto a baking sheet - I'm using my silicone sheets which have been an absolute lifesaver.

Bake for 10 minutes at 350F. Let cool 5 minutes.
