Delicious Coconut Pudding (Maja Blanca)

Our Dessert for New year celebration was Coconut pudding or Maja blanca. A common sweets during holidays and fiestas. Maja blanca is a delicious and creamy dessert made primarily from coconut milk. Making coconut pudding is easy and straightforward, you just have to mix the ingredients and cook.

In this recipe, I have used canned coconut milk, But if you have access to fresh coconut milk, The fresher, the better. I didn't add additional sugar as the condensed milk is already sweet, But again if you prefer a sweeter version, by all means.

Ingredients

Coconut milk, 1 can (14 ounce)
Coconut cream, 1 can (14 ounce)
Condensed milk, 1 can (14 ounce)
Fresh milk, 1 can (14 ounce)
Corn kernels, 1 cup
Corn starch, ¾ cup
Fresh milk or water, ¼ cup (To dilute the cornstarch mixture)

Preparations

  1. Grease your pan with butter and set aside.

  2. In a pot, Pour in the coconut milk, coconut cream, condensed milk and fresh milk. Stir well.

  3. Place it on the stove top, Let it boil and simmer. Stirring frequently to avoid burning the mixture at the bottom.

  4. Add the corn kernels and mix well.

  5. Pour the cornstarch mixture slowly. (¾ cup cornstarch dilute in ¼ cup liquid of water or fresh milk).

  6. Stir constantly until the mixture gets thick to a paste like consistency.

  7. Once off from the heat, Pour it immediately into the greased pan to settle.

  8. Tap the pan to prevent bubbles and smoothen the top with spatula.

Top it with grated cheese or latik (coconut curds) or your preffered choice.

Coconut pudding is tasty and easy to do. It has a shelf life of 3-4 days. It will surely satisfy your sweet cravings.
