I love this soup! It is such a great winter warmer and brilliant for using up an abundance of Kale from the plot. It is so simple to make as well. I found the recipe originally on https://pinchofyum.com/creamy-potato-kale-soup, however, I have changed it up a bit for this version.
First the main ingredients are
3 x Large Potatoes
1 x White Onion
1 x Celery Stick
A load of kale the more the better ( Stalks removed)
5 x tablespoons of butter (I used Vegan)
Stock
Milk (Vegan)
First I added the butter to the pan and then added the onions and celery, followed by the sliced potatoes and let them cook for a bit probably around 10 mins till the potatoes were a bit soft. I added salt and pepper at this stage as well.
I then added in a jug of veggie stock and the kale.
I then it simmer until the potatoes were soft.
Then the next bit is blitz the ingredients to a soup. The soup will be really thick and then loosen it with the milk.
and that's it!
I added cheese in the photo as I fancied some but that is optional of course = D
